In follow up to my last posting, my attempt at making strawberry preserves didn't turn out good at all but that did not stop me from trying again. Early this morning I went out and purchased another 4 lbs of Plant City Strawberries and found a new recipe to use.
Unlike the last recipe I used the new one has you mash the strawberries prior to adding the sugar. I mashed my strawberries using a potato masher which worked quite well.
My strawberries were on the stove top for just under an hour to complete the whole process of dissolving the sugar and then bringing the berries up to the required 220 degree temp.
The end result had me in the front yard, apron still on and arms raised victoriously in the air shouting "I have made preserves!!" Thankfully the only neighbor who witnessed this is also one of my good friends so he is use to my sometimes spastic behavior.
So there you have it. Eight jars full of strawberry preserves that come this winter when I'm deep in December snow in the heart of Indiana I'll be able to enjoy. :-)
